Perfectly-Fall Pumpkin Bread

Who else gets so excited for the changing seasons because , 1—you get to mix things up and pull out some new decor, and 2—you look forward to the seasonal treats you get to make (AND EAT!)?

As soon as the temperature starts to drop, all I can think about is cozy sweaters and an array of brightly colored leaves in every hue of red. And no, I didn’t forget about the iconic Pumpkin Spice Latte.

Whether you fully embrace and indulge in the fact, or you roll your eyes at the mere mention of the PSL, fall has basically become synonymous with Pumpkin Spice at this point.

Okay, I have to admit, I’ve never actually tried the “autumn-in-a-cup” that is the PSL, but can we talk about the Starbucks Pumpkin Bread?? Well if you love it like I do, I hope you’ll love this recipe (I really think you will). We came up with a dupe that’s deliciously moist with all the flavors of fall, AND easy on the wallet if you’re struggling to keep up with your Starbucks addiction and/or cravings for all things Pumpkin Spice.


Put on something comfy, grab your baking supplies, and read on to get started…

Prep

Prep your pan so that your bread will come out cleanly and easily — you can use a piece of parchment paper to line the pan, or spray some non-stick cooking oil. Don’t forget to preheat the oven to 350º F so you’re not stuck waiting after you’ve mixed everything together! (Am I alone in this?)

Mix

Mix all your ingredients together (you’ll need a medium & large bowl) until you’re left with a silky smooth batter. If you don’t have all the spices you need—feel free to use 4 teaspoons of pumpkin spice instead. I used Stevia in the Raw instead of regular sugar; it’s a 1-to-1 substitution, but it seems a bit less sweet (I’m not huge on sweet things).

Pour your batter of pumpkin spiced goodness into the pan, stick in in the oven, and get ready to have the aromas of fall fill your home.

Bake

Bake for an hour—if you have a toothpick you can poke it in to check if the bread’s ready, when it comes out clean, you’re good to go! Let the bread cool in the pan, cut into thick slices and let all your cravings be satisfied!
